The award-winning five-star restaurant at Seaham Hall, The Dining Room has recently unveiled its stunning new refurbishment alongside an exciting seasonal menu, offering guests an unforgettable dining experience. Perched high above the rugged North Sea, The Dining Room at Seaham Hall boasts unrivalled access to the finest local ingredients and fresh seafood from the surrounding region. The Dining Room’s newly refurbished interior features glittering 14-carat gold-plated chandeliers and gorgeous Georgian windows, creating a refined yet relaxed atmosphere for guests to enjoy their meal.

Executive Chef Damian Broom has crafted a menu that celebrates the very best of the North East, with dishes featuring locally sourced ingredients from hand-picked suppliers, including nearby honey farms and sustainable seafood providers. HRISHI’s Table at Farlam Hall

For those chasing truly experiential dining, Farlam Hall in Cumbria delivers a masterpiece with the recently launched chef’s table experience, HRISHI’s Table, provides an intimate and innovative private dining setting unlike no other, tailored to appease an array of palettes. Each course is a masterpiece, meticulously crafted to surprise and enchant guests. The unique dining experience will be hosted by Hrishikesh with Senior Sous Chef, Benhur, alongside the knowledgeable front of house team, the culinary ‘storytellers’ who will share the inspiration and processes behind each of the dishes.

ION Harbour by Simon Rogan

ION Harbour by Simon Rogan is the first and only restaurant in Maltese history to receive two Michelin stars. Since taking over stewardship of the restaurant in March 2023, Simon Rogan, alongside Executive Chef Oli Marlow, has made it his mission to share and adapt his renowned farm-to-table ethos, perfected at his three Michelin-starred restaurant, L’Enclume in the Lake District, UK. The menu at ION Harbour is strongly guided by hyperlocal, seasonal ingredients that are harvested, fished and foraged by the best, ethical and sustainable local producers. Highlight dishes include truffle pudding glazed in carob molasses, smoked eel with caviar and ferments, dill brined gem lettuce, and caramel mousse with white miso cherry plum for a sweet finish. Maestro’s at Treville Positano

Tucked away on the Amalfi Coast sits Treville Positano, the iconic and ultra-luxurious oasis and former home of acclaimed Italian film director, Franco Zeffirelli. At the heart of the hotel lies Maestro's, an exclusive restaurant overseen by Head Chef Vincenzo Castaldo, situated on a picturesque vine-covered terrace overlooking Positano. Maestro's menu showcases the finest local and seasonal ingredients sourced directly from Treville Positano's on-site organic gardens and expansive off-site farm. 

Guests can indulge in dishes like Stuffed Artichoke with mozzarella, anchovy, and black truffle; Risotto with yellow tomatoes, Burrata, Red prawns, and lime; and Linguine Nerano with zucchini and black pepper corn, among many other delightful creations that celebrate the flavours of the Amalfi Coast.

The show-stopping Bianca Bar doubles as a micro-distillery. Here, herbs and botanicals gathered from Treville's gardens are transformed into artisanal products elevating both Maestro's cuisine and the bars classic cocktails.
